Biochemical / physiological behavior.
Bovine casein sodium salt is a phosphoprotein. There are four main types of casein, accounting for about 80% of the total protein in milk: α-S1 casein, α-S2 casein, β-casein and κ-casein. Casein is considered to be the main protective ingredient in milk.
α-casein can be used as the immunogen of young children, and anti-α-casein antibody has a strong cross-reactivity with insulin. This effect may explain the rare autoimmunity of insulin, but it does not seem to have developed into type I diabetes.
