Application.
Casein in milk is a phosphoprotein. There are four main types of casein, accounting for about 80% of the total milk protein: α-S1 casein, α-S2 casein, β-casein and κ-casein. Casein is considered to be the main protective ingredient in milk.
Biochemical / physiological behavior.
Partially digested casein is a rich source of bioactive peptides, such as β-casein. However, bovine casein is different; A1 and B mutations do lead to the production of β-casein 7, but A2 does not.
