Application.
Phytic acid has been used to evaluate the potential of kidney beans as iron biofortified carriers. It is also used to study the effects of antinutritional factors on plasma lipoprotein levels.
Biochemical / physiological behavior.
Phytic acid is found in all eukaryotic cells. In plants, it is known to be the precursor of [PO4] 3-repository and other inositol phosphate and pyrophosphate. Its high surface negative charge makes it an effective chelating agent for bivalent and trivalent cations in vitro, and it is most likely related to Ca2+ or Mg2+ ions in vivo. In Saccharomyces cerevisiae, phytic acid, together with nuclear porin Gle1, regulates the nuclear transport of DExD-box by co-activating the RNA-dependent ATP activity of Dbp5.
