Overview
Application.
β-galactosidase is used for reverse phase (RP) adsorption. It is also used for the hydrolysis of whey lactose.
Biochemical / physiological behavior.
β-galactosidase breaks down lactose into its monosaccharide components, glucose and galactose. It also catalyzes the conversion of glucose to isolactose, an inducer of β-galactosidase, in the feedback loop.
Unit definition.
At 30 ℃, one unit hydrolyzes 1 millimoles of lactose per minute when pH is 4.5.
